This is a great lunch salad, that reminds me of a Caprese, with a little something extra. Thanks to Aracely White for sending me the recipe.
I used jarred pesto from Trader Joe’s so it took only moments to throw together. My friend, Sonja Lawrence, came over to taste test a few salads for me and gave it the thumbs up.
Ingredients
1 can chickpeas, drained and rinsed
1 cup grape or cherry tomatoes, sliced in half
1/4 cup fresh mozzarella
2 Tbsp fresh basil leaves, chopped
1/4 cup pesto
sea salt and ground pepper to taste
Mix all of the ingredients together and enjoy!
Serves 4
