This salad is a regular around the Brown household, and definitely a family favorite. I make it as big, individual dinner salads, and it’s definitely hearty enough to stand alone. Ripe avocados, applewood smoked bacon, grilled chicken, blue cheese....how can you go wrong?!
Ingredients
3 romaine hearts, trimmed and chopped
1/2 red onion, chopped
3 nice tomatoes, chopped
1/2 lb blue cheese, crumbled
1 lb grilled (cooked) chicken tenders, chopped
1 lb good bacon (like uncured, applewood smoked), fried and chopped
1 Haas avocado, sliced
Dressing
1/2 shallot, finely chopped
3/4 cup sour cream
1/2 cup buttermilk
2 Tbsp good mayo
1 Tbsp white wine vinegar
1 Tbsp chopped fresh chives
1 Tbsp chopped fresh italian parsley
1/4 lb blue cheese, crumbled
1/2 tsp kosher salt
1/2 tsp freshly ground pepper
While the chicken and bacon are cooking, make up the dressing. Just combine all the ingredients in a large bowl and whisk. You can make this up a day in advance to save yourself time while you’re making dinner. Just store it in a sealed container.
Divide the ingredients equally between 4 plates or large salad bowls. I like to put each ingredient in its own little section and let everyone toss it themselves. Serve each salad with its own dressing.
